Chicken skin chips are THE BOMB!
Whenever I get chicken thighs I remove all the skins, lay them out on a cookie sheet and bake them in the oven with the thighs (which I cover so they don’t dry out). They fry in their own fat until they are crisp and delicious. Add a bit of sea salt and I have a ridiculously satisfying crunchy treat!
