Problem with burgers

I’m trying to make my own burgers, I usually buy frozen ones 100% beef from supermarket, but I want to make my owns now, but everytime the result is not good.

Tried to make them with a press, tried the smash way, tried making them gently and not manipulate too much, I did the thumb thing in the middle etc

Everytime I do or too much rare (don’t want any pink on the inside because of pathogens, since I get my ground beef from the butcher and he mince beef from different cuts and animals) or too much cooked and dry.

Any recommendations to get a medium well burger but still juicy and palatable?
