Here are the recipes …
Dinner #1: Pan-fried trout with salad
-Season trout fillets with salt and pepper and fry in a skillet in plenty of butter (make sure it’s hot before placing trout in it).
-For the salad I used fresh romaine lettuce, sliced tomatoes, raw onion rings and cucumber cubes. As a dressing I used extra virgin olive oil, lime juice, salt and pepper.
Dinner #2: Zucchini noodles with my own version of puttanesca sauce
For the sauce:
-Start by sautéing 1lb of mince meat, just until the outside becomes brown. Remove from the heat.
-In a saucepan, cook 1 clove of chopped garlic and 1/2 fresh red chilli, chopped without the seeds. -Add 1 can of chopped tomatoes or 3 ripe tomatoes blended. Simmer on low, put the meat in.
-Chop very finely about 6 anchovy fillets, add to the sauce, then add about 1/2 cup of olives (I like chopping them and using both green and black olives) and also add 2tbsp of tomato paste.
-Season to taste, simmer for 15-20 minutes depending on how thick you want the sauce to be.
For the noodles:
-Using a julienne peeler or spiralizer make the zucchini noodles.
Dinner #3: Pork burgers with salad
-Mix some mince pork leg with plenty of fresh rosemary, add salt and pepper and make little patties with it. Place the patties in a hot skillet and cook for about 2-3 minutes on each side.
-For the salad I used fresh arugula, tomatoes, raw onion rings and summer squash. For the dressing I used some balsamic vinegar, olive oil and black pepper.
Dinner #4: Beef liver with cauliflower rice and avocado slices.
For the liver:
-Melt some butter in a skillet and when hot, add the chopped liver (I marinate it first in lemon juice for a few hours), cook for about 5 minutes.
-Make a sauce with fresh tomatoes, red pepper, onion and lots of basil. Add it to the cooked liver and simmer for 20 minutes, add 1tbsp of balsamic vinegar, salt and pepper and cook for another 10 minutes.
For the cauliflower rice:
-Process 1 whole cauliflower in a food processor. Sauté in butter or ghee some chopped leeks or onions, then add the cauliflower, salt and pepper and cook until done. For a more moist “rice” add some stock and simmer.
Dinner #5: Chicken curry.
-Start by sautéing 1 onion in ghee. When done, remove from the heat. Now start sautéing chicken breast or thigh chopped into bite size pieces, when they look a bit brown on the outside, put the onion back in.
-Add about 1 cup of plain yogurt (for a dairy free version, use coconut milk or cream), add 2 tbsp of curry powder and any other indian spices you like. I added 1 tsp of turmeric, ground ginger and a bit of cinammon. Stir well and simmer for 15 minutes.
-Serve with fresh cilantro and lime juice on the top.
